Processing and Logistics
Freshness is our top priority. AzForel LLC operates the largest trout-specific processing plant in the Transcaucasia region, strategically located to minimize journey times and deliver the freshest products to local and international markets. Our advanced processing units allow us to expertly prepare and package trout tailored to the preferences of each market, ensuring every fish reaches consumers in peak condition.

Hatchery
Duration: 1 – 2 months
It begins with selecting healthy broodstock for breeding. Eggs are collected and fertilized with sperm in the hatcheries. Once the eggs are fertilized the young salmon is raised in hatcheries. Fertilized eggs are kept in incubation trays or tanks with controlled temperature and water conditions. The eggs hatch into alevins – tiny fish with the orange-coloured yolk sac attached. This sac provides the fish with all the nutrients they need at this early stage. They spend their first months in freshwater, just as they would in the wild. At 8-10 weeks, the alevins enter the fry stage. They will have absorbed their yolk and have grown in size a little. The fry are rising to the water surface signalling that they are ready to feed themselves.

Spring Water Tanks
Duration: 1 – 2 months
The fry are then transferred to our Spring Water tanks, where they thrive under naturally cold and stable temperatures all year round. Unlike facilities that rely on artificial recirculation systems or water coolers, our naturally flowing spring water provides optimal health conditions, free of long-term risks like sickness or viral contamination.

Pools
Duration: 1 – 2 months
Our trout grow further in concrete pools supplied with pristine, oxygen-rich water directly from the Shamkirchai reservoir. Unlike other farms in the region that rely on costly recirculating aquaculture systems (RAS), our unique access to rock-filtered reservoir water ensures a natural, untouched supply. This distinction not only enhances the health of our trout but also delivers an unparalleled natural flavor..

Cages
Duration: 1 – 2 months
To meet market demand for larger red-flesh trout weighing 2-3 kg, we introduced Azerbaijan's first domestically developed sea cage system in 2019. Located in the Shamkir Reservoir on the Kura River, this innovative setup allows us to accommodate diverse customer requirements for size, shape, and color while maintaining the same exceptional quality.

Harvesting
All year around
We maintain a year-round harvesting cycle, ensuring steady availability and inventory solvency regardless of the season. At harvest, fish are transported with care to our processing facilities, where they are slaughtered using the most humane methods, including percussive and electrical stunning.
